A while back I went to bacon school at Proletariat Butchery, and loved it. So when we saw a listing for a prosciutto class, I signed up! I went to the butcher shop one Wednesday night, and covered a whole pig leg in salt.
Unfortunately for you, dear reader, prosciutto takes a long time to cure, sometimes as long as 18 months! Zeph the butcher is watching over my leg, so it’ll get all the care and supervision it needs, and hopefully in a few months I’ll be able to post a photo of my finished leg!
